Mini Peanut Butter & Honey Cups for your Valentine
Want to make your valentine an (easy) homemade treat? Try these mini peanut butter cups!
Making peanut butter cups at home is super easy, kinda fun and honestly they taste so so good. I love me a store-bought peanut butter cup, don’t get me wrong, but there’s just always something about homemade! I used my favorite favorite peanut butter, Laura Scudders, a touch of honey and dark chocolate from Trader Joe’s to make these and they are *insert bomb emoji here*. Let’s make them!

Ingredients
Homemade peanut butter cups
Peanut butter: I’m fairly certain you can use any type of peanut butter but haven’t tried every type imaginable. The kind I used is a natural kind without any added sugar and is fairly runny and it worked just fine.
Honey: You can also use powdered sugar in place of honey.
Dark chocolate: You don’t have to use dark chocolate but it’s my favorite! I used the one pound bar from Trader Joe’s. You can also use chocolate chips but I find that chocolate chips stay on the thick side and its not as easy to spread and they also harden faster making it more difficult distribute amongst the cup as you go along.
Cinnamon: this is totally optional but I really like the hint of warm cinnamon with the other flavors.

How to make peanut butter cups
Line your pan with mini cupcake liners first!
Combine honey and peanut butter in a small bowl.
Then melt the chocolate in the microwave until smooth. Do it in one-minute increments until just melted.
Next add about 1 tsp of chocolate to each cupcake liner, smooth it out with the back of the spoon to make sure it evenly coated.
Use about 1/2 tsp of the peanut butter mixture for each peanut butter cup. Shape it into a disc shape as best as you can and place in each liner.
Then top each with more chocolate (about another 1 tsp).
Now they need to set in the fridge for 1 hour. If you want to add sprinkles though – add them after the chocolates have been in the fridge for about 1 minute. That way the chocolate can get a little more tacky so that the sprinkles don’t sink into the chocolate.

Ingredients
- 2 cups chopped dark chocolate
- 1/3 cup peanut butter, natural unsweetened (*see note about powdered sugar)
- 2 tbsp honey
- 1/4 tsp cinnamon (optional)
Instructions
- Line cupcake tin with cupcake liners.
- In a small bowl, mix peanut butter and honey until well combined. Set aside.
- In a microwave safe bowl, melt chopped dark chocolate in the microwave in 1 minute increments until melted.
- Add about 1 tsp of chocolate to the bottom of each cupcake liner, use the back of the spoon to make sure the bottom in coated with chocolate.
- Take about 1/2 tsp of the peanut butter mixture and shape it into a small disc shape (it doesn't have to be perfect). Place the peanut butter disc into cupcake liner and repeat.
- Add another 1 tsp or so of melted chocolate on top of each and smooth out with the back of a spoon if necessary. Place in the fridge for about an hour to set. But if you want to add sprinkles leave them in the fridge for about 1 min, then top with sprinkles and return for remaining time.
- This recipe will yield more peanut butter cups than can fit in a standard pan. Instead of waiting the full hour to resume, simply remove the cups from the pan after about 10 minutes and transfer to a plate or tray so you can continue making the remaining peanut butter cups.
