Peanut Butter Filled Chocolate Cookies

Introducing Peanut Butter Filled Chocolate Cookies! Featuring a soft chocolate cookie surrounding a sweet peanut butter filled center. They’re amazing!

I love peanut butter and chocolate (Hi gluten-free peanut butter cup brownies). And really just love peanut butter stuff period. Oh hey peanut butter and jelly cookies, no bake peanut butter pretzel tart, peanut butter & honey oat bars and peanut butter bread! You get the idea. I’m so excited to add these cookies to figjar.com and share them with you all. They are the perfect cookie to add to your holiday cookie offerings. Wink wink 🙂

Cookie ingredients

  • Flour
  • Cocoa
  • Baking soda
  • Sugar and brown sugar
  • Butter
  • Peanut butter
  • Vanilla
  • Powdered sugar
  • Egg

So for some pretty fancy cookies that’s not too long of an ingredients list, eh?

Assembling the cookies

Assembling these cookies takes a little bit of time, but its well worth your efforts! Of course these are delicious but they are also kind of impressive. It’s not everyday you get a peanut butter filled cookie like this! Also, it’s really not difficult to make them, just takes a little extra elbow grease.

1. Roll the peanut butter filling into 1 inch balls

2. Scoop 1 1/2 tbsp of chocolate dough with a cookie scoop and flatten, place a peanut butter ball on top

3. Wrap the chocolate dough around the peanut butter ball

4. Gently roll in your hands to smooth out the dough and form a ball

5. Press down on the ball to create a disc shape

6. Repeat with the rest of the dough and filling

Soft chocolate cookies with a surprise peanut butter center!

Ingredients

Outer Chocolate Cookie

  • 1/2 cup butter (1 stick) (softened)
  • 1/4 cup creamy peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda

Peanut Butter Center

  • 3/4 cup creamy peanut butter
  • 3/4 cup powdered sugar, plus more for dusting

Instructions

  1. Combine dry ingredients for chocolate cookies: flour, cocoa and baking soda; set aside.
  2. Use a mixer to beat softened butter, 1/4 cup of peanut butter, sugar, and brown sugar until fluffy. Add vanilla and egg. Beat well. Stir in the dry ingredients and mix until combined. It will be dry at first and will take a few minutes. Set aside.
  3. In a separate bowl, combine the 3/4 cup powdered sugar and 3/4 cup peanut butter until fully incorporated.
  4. Roll as many balls as you can out of the peanut butter/powdered sugar mixture and place them on parchment. Use 1 tbsp of filling per ball.

  5. Preheat oven to 375F.
  6. Scoop 1 1/2 tbsp of the chocolate dough, and flatten it with your hands. Place a peanut butter ball in the center and wrap the dough around the peanut butter ball. Roll the ball gently in your hands to smooth out the dough. Once it’s pretty smooth, gently press the ball down to flatten into a disc. Repeat with remaining dough and filling.

  7. Bake cookies for 9-10 minutes.
  8. Move to a cooling rack after removing from the oven and dust with powdered sugar once they are cool.
  9. Enjoy!
