The Best Lavender Syrup for Coffee (Simple Recipe!)

I was skeptical about lavender at first but a friend convinced me I had to try a lavender latte and then I was hooked. I love its sweet floral flavor! Lavender Simple Syrup is aptly named as it gives you the purest lavender flavor and is very simple to make. The only ingredients you need to make it are: sugar, water, and lavender. The equipment needed is simple too: just a stove, a small saucepan, and a fine mesh strainer! Let’s make it!

Ingredients
Lavender Simple Syrup
You will just need 3 simple ingredients to make lavender simple syrup:
- Granulated white sugar (I prefer to use organic cane sugar)
- Water: use filtered water for best results
- Dried lavender buds (affiliate link)
WHERE TO BUY LAVENDER
The easiest way to buy lavender is online through Amazon (affiliate link), but you can sometimes find it in grocery stores with more of a healthy focus, like Whole Foods and Sprouts.
ARE LAVENDER LEAVES EDIBLE?
Yes! All lavender should be edible, in its natural state, but it is best to buy culinary lavender (affiliate link) to make sure it is freshest and free of any additives that you may not be aware are there.
DOES LAVENDER HELP WITH ANXIETY?
Lavender is widely used to reduce stress and calm the nervous system. It’s commonly used for aromatherapy and of course, we find it in all sorts of lotions and other household products. Does eating it have any more of a calming effect? Not that I’ve personally noticed, but I do find it calming because you can’t help but take in the scent as you consume it. And there is research that indicates it really can reduce stress! My take: It’s worth a try!
HOW TO MAKE HOMEMADE LAVENDER SIMPLE SYRUP
The process of making lavender simple syrup is just like that of any other homemade simple syrup. You will need to boil equal parts sugar and water, in a small pot, and in the case of lavender syrup, you will add the dried lavender flowers to the sugar/water mixture as it boils.
After bringing to a boil, and then simmering for about 5 minutes, you’ll need to strain out the flowers and store your syrup. It’s that easy!
TROUBLESHOOTING FOR HOMEMADE LAVENDER SYRUP
WHY IS MY SYRUP BITTER?
Make sure you simmer the syrup for the allotted time and then strain within 10 minutes through a fine mesh strainer to keep bitterness away. Allowing the syrup to simmer or steep for too long (much like tea!) can end up imparting a bitter taste to the syrup.
WHY IS MY LAVENDER SYRUP NOT A PURPLE COLOR?
Some recipes suggest adding butterfly pea flower powder and lemon juice to give the lavender syrup a purple color. I don’t include instructions for this, as I prefer the natural color and flavor of pure lavender syrup. But this recipe might give you some tips for making your syrup a more purple color.
STORAGE INSTRUCTIONS
Store syrup in an airtight container in the refrigerator for up to two weeks. I find that a glass mason jar with a lid works best, or a glass bottle with a little pour spout. An oil bottle also works great for this!
HOW LONG DOES THIS SIMPLE SYRUP KEEP?
The general rule of thumb for homemade simple syrup is to use it for up to two weeks when kept in the refrigerator and for up to one week when kept at room temperature. Most simple syrups have a similar shelf life.
CULINARY USES FOR LAVENDER SIMPLE SYRUP
Lattes – probably the most delicious way to enjoy this edible flower! Add a floral twist to your latte by replacing your usual sweetener with a tablespoon of lavender syrup and voila – lavender latte! It also works great in a matcha latte. You can find my recipe here. Lavender lemonade – cold drinks like lemonade are also great with a little kiss of lavender. The citric acid of orange and lemon go very well together! Try adding some of this syrup to lemonade for a nice floral kick.
Cocktails – honestly, I’m not a cocktail maker but think it would work great for this as well. Here’s a lavender martini recipe that looks great!
Hot chocolate – just a small amount of lavender adds amazing flavor to hot chocolate! Try my recipe here.
Homemade lavender soda – I haven’t tried this recipe yet, but it sounds delicious. All you need is lavender simple syrup, lemon juice, and crushed ice.
