2 4-6 oz cod fillets
1 14.5oz can diced tomatoes
2 tbsp green olives (sliced in half)
1cup grated zucchini
1/2 tsp dried oregano
zest from one lemon
juice from half a lemon
1 tsp minced garlic (2–3 cloves)
1/2 tsp salt
1/8 tsp pepper
fresh parsley for topping (optional)
Instructions
Preheat oven to 375°F.
In an 8 x 8 baking dish, combine tomatoes, zucchini, lemon zest, lemon juice, olives, oregano, salt and pepper.
Place the cod fillets on top of the mixture, sprinkle each with a little salt and pepper.
Distribute some of the tomato mixture over the fish.
Bake for 15-20 minutes, until internal temperature of 145°F is reached.
