Italian Baked White Fish with Tomatoes and Olives is an effortless dish with big flavor payoff.

I love this recipe. It’s full of flavor, it’s crazy easy, yet it feels a little fancy. Baking the fish in tomatoes helps keep it tender and lemon, green olives, garlic and oregano impart lots of flavor. Oh and I forgot to mention this is a very healthy meal and less than 10 ingredients! Serve it with couscous, rice, a salad or even just a nice hunk of crusty bread and you are set! Let’s make it!

Ingredients

Italian baked fish with tomatoes and olives

  • Cod fillets (or another white fish like tilapia or halibut)
  • Canned diced tomatoes
  • Green olives
  • Garlic
  • Lemon
  • Dried Oregano
  • Salt and pepper
  • Fresh parsley (for topping, optional)

See? Only 9 ingredients total, parsley is optional and do we even need to count salt and pepper? It is nice to top this with parsley though. It’s amazing what a sprinkle of fresh herbs can do for a dish, for not only the taste but also the appearance.

How make baked fish with tomatoes

In addition to the short ingredient list, the instructions to make this fish are also going to be short. Basically a one pan deal here.

Just place everything except the fish in an 8 x 8 baking dish and mix.

Then place the fish fillets on top, give them an extra sprinkle of salt and pepper and spoon some of the tomato mixture over the fish, getting those fillets all nice and nestled into the tomatoes.

Now just pop it in the oven and bake!

What to serve it with

I like to serve this with couscous and salad or just one of those. For ultimate simplicity, you could just serve this with some nice crusty bread to soak up all the delicious juices from the fish.

This baked fish is tender, flavorful and such an easy meal. I hope you enjoy it as much as I do!

Ingredients

  • 2 4-6 oz cod fillets
  • 1 14.5 oz can diced tomatoes
  • 2 tbsp green olives (sliced in half)
  • 1 cup grated zucchini
  • 1/2 tsp dried oregano
  • zest from one lemon
  • juice from half a lemon
  • 1 tsp minced garlic (23 cloves)
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • fresh parsley for topping (optional)

Instructions

  1. Preheat oven to 375°F.
  2. In an 8 x 8 baking dish, combine tomatoes, zucchini, lemon zest, lemon juice, olives, oregano, salt and pepper.
  3. Place the cod fillets on top of the mixture, sprinkle each with a little salt and pepper.
  4. Distribute some of the tomato mixture over the fish.
  5. Bake for 15-20 minutes, until internal temperature of 145°F is reached.
