Combine honey, water and lavender flowers in a small sauce pan.
Cook over medium-low heat just until the mixtures begins to bubble around the edges.
Remove from heat and allow syrup to 'steep' until desired lavender flavor intensity is reached. Strain out the flowers once taste is to your liking. (Anywhere from 30 minutes-1 hour).
Store in a glass, air-tight jar in the refrigerator and enjoy for up to two weeks.
