You really can use any kind of honey you would like. Just keep in mind that honey is one of the main flavors in this syrup, so make sure it’s one you like the taste of. It’s ideal to use raw + local honey if you’re able to. Raw honey is a healthier option as it contains higher levels of antioxidants and nutrients.

How to make honey lavender syrup

Combine honey, lavender and water in a small sauce pan.

Cook over medium-low heat until honey is melted and the mixture just starts to bubble.

Allow the syrup to steep for 30 minutes – 1 hour. You can taste the syrup at 30 minutes to see if the level of lavender flavor is at your preferred level on lavender intensity. Strain once desired flavor is reached.

Ingredients

  • 1/2 cup honey
  • 1/2 cup water
  • 3 tsp dried culinary lavender

Instructions

  1. Combine honey, water and lavender flowers in a small sauce pan.

  2. Cook over medium-low heat just until the mixtures begins to bubble around the edges.
  3. Remove from heat and allow syrup to 'steep' until desired lavender flavor intensity is reached. Strain out the flowers once taste is to your liking. (Anywhere from 30 minutes-1 hour).

  4. Store in a glass, air-tight jar in the refrigerator and enjoy for up to two weeks.
