Soft and Chewy Honey Cookies

This recipe comes to us today from the Alpha-Bakery Kids Cookbook, circa 1997. My mom gave me this book when I was a kid and I’ve been having fun reading it as an adult! Without a doubt, this is my favorite recipe from the book!

Honey cookies
I love the simplicity of these cookies! Apart from the fact that are they super easy to make (made with just one bowl), they also star one of my favorite ingredients: honey! Personally, I always have these ingredients in my pantry, which means no special trips to the store are required. Yay!
- Salted butter
- Honey – any good quality honey will work for this. I used clover honey but you might try orange blossom honey or buckwheat honey. Also, you might try honey buckwheat cookies for a nice twist on these cookies!
- Brown sugar – white sugar can be used but will not result in that perfect molasses/honey flavor
- Egg
- All-purpose flour
- Baking soda
- Salt
How to make honey cookies
STEP 1
First, start with soft butter in a large bowl. You want it to be soft enough to mix with a spoon. Combine the butter with egg, brown sugar, and honey. Stir until creamy and fully combined.
STEP 2
Then, add the dry ingredients (flour, salt, baking soda) to the combined wet ingredients and stir again until fully combined.
STEP 3
Next, use a cookie scoop to spoon 1 1/2 tbsp of cookie dough per cookie onto a cookie sheet lined with parchment paper. The dough is fairly wet, so a cookie scoop really helps drop the dough onto the sheet neatly. The cookies will spread so leave a good 3 inches between each.
STEP 4
Bake cookies at 375F for 8-10 minutes or until golden brown around the edges. Allow cookies to cool for 5 minutes before transferring to a cooling rack. Finally, sprinkle with a bit of sea salt and enjoy!
How do you get perfectly round cookies?
The best way to achieve perfect-looking cookies is the cookie scoot! Simply place a round cookie cutter or even a large drinking glass over each cookie immediately after removing from the oven and scoot the cookie back and forth until they have perfectly smooth edges.
What does honey do in baking cookies?
Honey serves several purposes in baking cookies. Aside from adding natural sweetness, honey contributes to the moisture content in baking, making for a super soft and chewy cookie. It also makes delicious banana bread! Honey acts as a binding agent as well, which helps hold the other ingredients together. When substituting honey for sugar, you might need to adjust the other liquids in the recipe and reduce the baking temperature slightly to prevent over-browning.

Store in an airtight container for up to one week at room temperature.

Ingredients
- 1/2 cup salted butter, softened (enough to just mix with a spoon)
- 1/2 cup honey
- 1/2 cup brown sugar
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 375F.
- In a large mixing bowl: combine butter, honey, brown sugar, and egg using a large spoon. Mix until creamy and no large chunks of butter remain.
- Add the flour, salt and baking soda and stir again until dough is smooth.
- Use a 1 1/2 tbsp cookie scoop to drop cookie dough onto a parchment lined baking sheet. Leave about 3 inches space around each cookie to allow for spreading.
- Bake for 8-10 minutes, until just golden brown around the edges.
- Allow cookies to cool on the baking sheet for a few minutes after coming out of the oven, then transfer to a wire cooling rack. Sprinkle with sea salt.
