Peppermint Simple Syrup

Peppermint Simple Syrup is so easy to make at home. All you need is fresh mint leaves, sugar and water!

If you’re wanting to make a fresh, unprocessed, delicious peppermint simple syrup, you’ve come to the right place. Just 3 ingredients (mint, sugar and water) and a little over 30 minutes is all you need. This syrup is great for coffee drinks (peppermint mochas, anyone?), cocktails, in my watermelon mint popsicles, homemade ice cream… you get the idea!

As we know, I have an Aerogarden (affiliate link) that I LOVE and it has been just overflowing with mint! This simple syrup is a great way to use some of it up. Also not a bad idea to double the batch and share with friends!

Ingredients

Peppermint simple syrup

You don’t have to follow the measurements in this post, the rule is: equal parts sugar, water and mint.

  • 1 cup fresh mint leaves
  • 1 cup granulated sugar
  • 1 cup water

This amount will yield just under 1 cup of syrup.

How to make peppermint simple syrup

The process for making this mint syrup is as simple as the ingredients!

Simply place the mint, water and sugar in a pot on the stove over medium heat and stir.

Allow this to cook, stirring occasionally until the sugar dissolves and the mixture begins to bubble gently. Reduce the heat and allow it simmer for about 10 minutes to thicken. You can simmer for more or less time depending on how thick you want it. It will thicken the longer you cook.

When you’re done cooking the syrup, allow it to rest for about 30 minutes before straining. If you’re pressed for time, you can steep for less time, this just helps impart more deep mint flavor.

How to store

You will want to store your syrup in the fridge. I prefer to keep it in a glass jar with a label and date, but any airtight container will do.

How long does it keep?

Enjoy this syrup for up to 2 weeks.

Instructions

  1. Place all ingredients in a sauce pan over medium heat, stir occasionally and bring to a gentle boil.
  2. Reduce heat slightly and cook for about 15 minutes. Then turn off the heat and let steep for 30 minutes.
  3. Strain syrup through a mesh colander to remove mint leaves and store in a jar in the fridge for up to 2 weeks.
