Gluten-Free Peanut Butter Cup Brownies

This is one of my favorite brownie recipes! It’s really easy (all made in one bowl with basic ingredients) and it has melted peanut butter cups all over the top. Need I say more? Okay, I will. Not only is this recipe absolutely delish and easy, it’s also gluten-free. But you can easily sub in all-purpose flour if you want. Let’s make them!

INGREDIENTS
Gluten-Free Peanut Butter Brownies
- Butter – I just use salted butter in all my baking recipes
- Brown sugar
- Vanilla
- Eggs
- Cocoa powder
- Oat flour – make your own by just blending plain oats in the blender until finely ground
- Baking powder
- Salt
- Chocolate chips – this is very optional but I always add a little handful of chocolate chips to my brownies
- Dark chocolate peanut butter cups (Trader Joe’s or Justin’s brand)
*A little note about the peanut butter cups: you need to use either Trader Joe’s or Justin’s brand or you will not get that smooth melted finish. I’ve tried it with Reese’s peanut butter cups and the peanut butter wouldn’t fully melt and it looked icky. Still tasted ok of course though!
How to make gluten-free peanut butter brownies
Follow the brownie recipe as written. You can also use a box mix of brownies if you want to keep things super simple. But this is an easy brownie recipe that is made in one bowl and they come together quick.
While the brownies bake, unwrap the peanut butter cups.
As soon as the brownies come out of the oven, place unwrapped peanut butter cups on top of the brownies and let them sit for about 5 minutes. If you are impatient like me, you can periodically pat the peanut butter cups down during the melting process to help them along.
Now comes the funnest part! Use a spatula to spread the melted peanut butter cups all around until smooth.

Gluten-Free Peanut Butter Brownies

Ingredients
- 2 sticks butter, melted
- 3/4 cup brown sugar
- 1 tsp vanilla
- 3 eggs
- 3/4 cup cocoa powder
- 1/2 cup oat flour
- 1 tsp baking powder
- 1/2 tsp salt
- optional: 1/3 cup chocolate chips
- 18–22 dark chocolate peanut butter cups (Trader Joe’s or Justin’s brand)
Instructions
- Preheat oven to 350˚.
- Melt the butter in a large microwave safe bowl. Once fully melted, add the sugar and vanilla. Whisk well until it looks sort of like caramel. Add the eggs and whisk again until combined.
- Add the dry ingredients: cocoa powder, oat flour, baking soda, and salt. Add chocolate chips if using and stir until fully combined.
- Empty brownie batter into a greased 8 x 8 baking dish lined with parchment and bake for 25-30 minutes, until a toothpick inserted comes out with a few crumbs. I recommend checking them at 20 minutes to see where they are at.
- Immediately upon removing the brownies from the oven, place unwrapped peanut butter cups on top of brownies. Allow to rest for about 5 minutes, periodically tapping the peanut butter cups down a little to help them along.
- Spread the melted peanut butter cups across the brownies using a spatula until smooth.
- Enjoy!
Notes
It takes a while for the PB cups to set up again- a few hours. I’m sure you could pop them in the fridge for a bit to speed things along if you want but I’ve never done that. Or you can just eat them warm with luscious pools of melted pb cups all around. It’s absolutely delicious whether they are set or not, but just something to keep in mind depending on your preference and when you plan on eating them 🙂
Be sure to use either Trader Joe’s or Justin’s brand for the peanut butter cups. The peanut butter inside Reese’s PB cups won’t melt!
