Gluten-Free Peanut Butter Brownies

Super easy and DELICIOUS gluten-free brownie recipe requiring just one bowl and few simple ingredients!

Ingredients

  • 2 sticks butter, melted
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 3 eggs
  • 3/4 cup cocoa powder
  • 1/2 cup oat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • optional: 1/3 cup chocolate chips
  • 1822 dark chocolate peanut butter cups (Trader Joe’s or Justin’s brand)

Instructions

  1. Preheat oven to 350˚.
  2. Melt the butter in a large microwave safe bowl. Once fully melted, add the sugar and vanilla. Whisk well until it looks sort of like caramel. Add the eggs and whisk again until combined.
  3. Add the dry ingredients: cocoa powder, oat flour, baking soda, and salt. Add chocolate chips if using and stir until fully combined.
  4. Empty brownie batter into a greased 8 x 8 baking dish lined with parchment and bake for 25-30 minutes, until a toothpick inserted comes out with a few crumbs. I recommend checking them at 20 minutes to see where they are at. 
  5. Immediately upon removing the brownies from the oven, place unwrapped peanut butter cups on top of brownies. Allow to rest for about 5 minutes, periodically tapping the peanut butter cups down a little to help them along. 
  6. Spread the melted peanut butter cups across the brownies using a spatula until smooth. 
  7. Enjoy!

Notes

It takes a while for the PB cups to set up again- a few hours. I’m sure you could pop them in the fridge for a bit to speed things along if you want but I’ve never done that. Or you can just eat them warm with luscious pools of melted pb cups all around. It’s absolutely delicious whether they are set or not, but just something to keep in mind depending on your preference and when you plan on eating them 🙂

Be sure to use either Trader Joe’s or Justin’s brand for the peanut butter cups. The peanut butter inside Reese’s PB cups won’t melt!
