These feta fried eggs are a super easy way to breathe new life into your breakfast routine. They are made by melting + crisping up feta and cracking the eggs on top for a delightfully crispy and feta-y crust. Feta eggs are jam-packed with flavor and pair perfectly with avocado and some whole-grain toast for a balanced meal.

Ingredients

  • 1/4 cup crumbled feta cheese (from block packed in brine)
  • 2 large eggs
  • a few sprigs of fresh parsley, chopped
  • a few sprigs of fresh dill, chopped
  • pinch of black pepper

Serve with

  • 1 slice whole-grain toast
  • 1/2 small avocado

Instructions

  1. Heat a non-stick skillet over medium heat. 
  2. After a few minutes of heating, sprinkle the feta in an even layer, about the size that will take up two eggs if using a larger skillet. Allow it to cook 1-2 minutes so it can melt a little. 
  3. Crack 2 eggs on top of the feta. Use a spatula to scoot the egg whites around a little and break that thick membrane. This just helps the eggs cook more evenly. 
  4. Cover the pan with a lid and cook until whites are set, about 3 more minutes, but check on them and you can cook them longer or shorter depending on your preference. 
  5. Transfer the eggs to a plate, sprinkle with fresh herbs and pepper. 
  6. Smash the avocado onto your toast and serve with your eggs. Enjoy!
