Feta Fried Eggs with Fresh Herbs (Viral Recipe)
These Feta Fried Eggs are a super easy way to breathe new life into your breakfast game. They are made by melting + crisping up feta and cracking the eggs on top for a delightfully crispy and golden feta crust. Feta eggs are jam-packed with flavor and pair perfectly with avocado and some whole-grain toast for a balanced and simple breakfast (or anytime meal!).
I eat eggs pretty much every morning for breakfast. Usually, it’s a veggie scramble of some sort paired with Ezekiel bread and some fruit. But I like to mix it up every once in a while and these crispy feta eggs are the perfect breakfast for a quick, healthy start to the morning. I saw that this recipe was taking social media by storm and figured I had to try it! And it sure is viral for good reason. I LOVE that is egg recipe has simple ingredients and takes just 5 minutes to make. Let’s make breakfast!

Ingredients
Feta Fried Eggs
- greek feta cheese – Preferably a block of feta, not pre-crumbled feta. Trader Joe’s is the most creamy feta I have found.
- eggs
- fresh herbs – I topped mine with fresh dill and parsley (which grow great in my Aerogarden). Fresh herbs are the perfect complement to the salty feta.
- black pepper
- avocado
- whole-grain toast
I think the original recipe called for a tortilla with smashed avocado which is a lovely idea. I just had these with my favorite whole-grain sprouted toast, but I did include avocado and highly recommend it! Crushed red pepper flakes or hot sauce are also a nice addition. You might also notice that I did not list butter or olive oil in the ingredients list; the healthy fats from the feta cheese keep the egg from sticking (as long as you use a nonstick pan).
How to make feta fried eggs
STEP 1: Heat the pan
Heat a small nonstick skillet over medium heat and add the feta to the hot pan in an even layer, about the size that will take up two eggs if using a larger skillet. Allow this to cook for a 1-2 minutes until it starts to melt.
STEP 2: Crack egg over feta
Scoot some of the melted feta towards the edges of the pan and crack two eggs into the center of the feta ring.
STEP 3: Cover and cook
Cover the pan with a lid and cook until the egg whites are set and a golden brown, cheesy crust begins to form, about 3 more minutes. Check on them and you can cook them longer or shorter depending on your preference. For more runny egg yolks (sunny side up style), cook just until the egg whites are set. For more firm yolks, allow the yolk to turn translucent (a whitish color). Whenever I make fried eggs, I like to scoot the egg whites around a little with a spatula and break that membrane to help the whites along. This helps achieve a perfectly cooked egg.
STEP 4: Plate and Add Desired Toppings
Remove the eggs from the pan and sprinkle with chopped fresh herbs, pepper, and a drizzle of hot sauce or crushed red pepper if desired. Make sure to scoop up all of that crispy feta!
Smash the avocado onto the toast and serve alongside your eggs or you can top the toast with your crispy fried feta eggs. That’s it! 5-minute feta eggs for the win!

Eggs are so versatile and can go great with lots of sides. Here are a few ideas:

- hash browns with a shake of hot sauce and ketchup

- a dollop of basil pesto – I have a version with walnuts and pepitas

- Heat a non-stick skillet over medium heat.
- After a few minutes of heating, sprinkle the feta in an even layer, about the size that will take up two eggs if using a larger skillet. Allow it to cook 1-2 minutes so it can melt a little.
- Crack 2 eggs on top of the feta. Use a spatula to scoot the egg whites around a little and break that thick membrane. This just helps the eggs cook more evenly.
- Cover the pan with a lid and cook until whites are set, about 3 more minutes, but check on them and you can cook them longer or shorter depending on your preference.
- Transfer the eggs to a plate, sprinkle with fresh herbs and pepper.
- Smash the avocado onto your toast and serve with your eggs. Enjoy!
