Easy Cherry Popsicles with Vanilla and Lime (4 ingredients!)
Homemade Cherry Popsicles, but make them vanilla! This simple popsicle recipe is made with sweet cherries, vanilla simple syrup, fresh lime juice, and water. They are so refreshing on a hot summer day!
During this time of year, I can’t help but start brainstorming a bunch of new recipes to add to my many popsicle recipes (mango pops and earl grey cream pops, just to name a few). A popsicle is a great way to cool down quickly on a hot day, and these cherry pops definitely do the trick! These homemade popsicles are made with frozen cherries, vanilla simple syrup, lime juice and water.
They contain no artificial sweetener or corn syrup – just a bit of sugar – and have a soft texture (not icy), deep red color, and wholesome, intense cherry flavor! You can sweeten them a few different ways but I LOVE vanilla and cherry together so I’m definitely partial to that combo.
The amount of lime juice is small, just enough to bring a little brightness to the whole mix. You can’t identify the flavor of lime but it really makes a difference! Let’s make these!

Ingredients
- frozen cherries – I’m a huge fan of fresh fruit in popsicles (it’s cherry season around here so we’ve been eating a ton of fresh cherries.). But for the sake of ease, I prefer frozen cherries for this recipe. You can also use fresh cherries though! Just make sure to remove the pits first. You can use a cherry pitter or simply place cherries onto the mouth of a small, clean glass bottle (such as an empty hot sauce bottle) and push the pit down into the bottle using a metal straw.
- vanilla simple syrup – I LOVE these with vanilla, but you can also use agave nectar, maple syrup or just plain simple syrup
- lime juice – it gives that little pop of freshness to balance the sweetness
- water
HOW TO MAKE CHERRY POPSICLES
COMBINE ALL INGREDIENTS IN A BLENDER
It doesn’t get much easier than this: just place everything into a high speed blender or food processor and blend away until smooth!
However, you will need to make the vanilla syrup first if using it. Luckily, that is really easy to make too ? All you need to do is place sugar, water, vanilla extract, and scraped vanilla bean pods in a small saucepan and cook until boiling and sugar is dissolved. Here’s my recipe! Remove the bean pods, strain if desired and you’re ready to add it to the cherry popsicle mixture!
Pour the popsicle mixture into molds straight from the blender, insert popsicle sticks, and freeze for at least 6-8 hours. I will usually just let mine freeze overnight so we can enjoy them the next day.
REMOVE POPSICLES FROM THE POPSICLE MOLDS
If you have the popsicle mold I have pictured above, pop a mold out of the tray and run it under slightly warm water. Don’t use hot water, as the popsicle will begin to melt before you get it out of the mold. Gently wiggle the popsicle stick while under the running water until the popsicle slides out.
Place popsicles on a baking sheet lined with parchment, then transfer to the freezer reset. After about 30 minutes, you can transfer them to a Ziploc.
SUBSTITUTIONS AND ADDITIONS
- Swap out the vanilla for another type of simple syrup! Brown sugar syrup goes great with everything!
- Use less vanilla. I love the taste of vanilla in these popsicles but feel free to adjust the amount to your liking.
- Use fresh cherries. Got a great spot for local cherries? They are welcome in this recipe!
STORAGE INSTRUCTIONS
Once popsicles are completely frozen, keep them in the freezer for up to 6 weeks. You can either remove them each from their popsicle molds ahead of time or simply leave them in the popsicle mold until you’re ready to enjoy them. The downside of leaving them in the molds is that they will be occupied in the case that you want to make more popsicles (such as banana split pops)! Also, you won’t have immediate access to a popsicle when you want one (since you’ll have to run it under warm water for a while to remove it).

Ingredients
- 16 oz bag frozen cherries
- 1/4 cup vanilla simple syrup
- 1 cup water
- 2 tbsp fresh lime juice
Instructions
- Make the vanilla simple syrup first.
- Combine cherries, vanilla syrup, lime juice, and water in a blender and blend until smooth.
- Pour the mixture into popsicle molds. This recipe will make 10 popsicles with the mold I have linked. Please note: if you have a different mold, you may have extra mix or end up with less popsicles.
- Cover the popsicle molds, insert popsicle sticks and freeze for 6 hours or over night.
- To remove a popsicle from the mold, pop out one mold and place under running lukewarm water. Gently wiggle the stick and pull until the popsicle slides out easily.
- I like to remove all the popsicles at once, placing them on a baking tray lined with parchment as I remove them from the molds. Then place the tray in the freezer to let the popsicles set up again, for 30 minutes. Then transfer to a Ziploc bag so you can grab a popsicle any time you want with no fuss!
