Cucumber Lemonade
Try this refreshing Cucumber Lemonade for an instant cool down. It’s so easy to make and is perfect for summer.
I have said before I’m not a huge lemonade person but sometimes when you throw in a special twist (such as this Hibiscus Lemonade or this Strawberry Basil Lemonade), I can really get into it. Like this Cucumber Lemonade. The cucumber brings such a refreshing balance that I really love and it’s so easy to whip this up to enjoy on a hot summer day. Let’s make it!

Ingredients
Cucumber lemonade
- Lemon juice
- Cucumber
- Water
- Sugar
- Optional – garnish with mint or add muddled mint for more flavor
How to make cucumber lemonade
Start by juicing your lemons. A little tip for extracting more juice from lemons? Microwave them for 30 seconds, then gently press down on the lemons and roll back and forth under your palm (make sure they aren’t too hot!).
Strain out any seeds and pulp, then make the cucumber water. Blend chopped cucumber with water in a blender until smooth. Then strain through a mesh sieve (affiliate link) and combine with lemon juice.
Make simple syrup: combine equal parts water and sugar in a saucepan over medium heat. Stir until dissolved and the mixture begins to bubble. Remove from heat.
Add simple syrup and extra cucumber slices to lemonade in a pitcher or large bottle.
Add ice to the pitcher when ready to serve or you can just add ice to glasses. Garnish with fresh mint if you want!

Ingredients
Cucumber Lemonade
- 1 cup lemon juice
- 1 cup peeled & chopped cucumber
- 1/2 cup sliced cucumber
- 1 cup water
- 1/2 cup simple syrup
- fresh mint for garnish (optional)
Simple Syrup
- 1 cup sugar
- 1 cup water
Instructions
- Make the simple syrup. Combine 1 cup sugar and 1 cup water in a small saucepan over medium heat. Cook just until boiling and sugar is dissolved. Remove from heat and set aside.
- Juice lemons, strain to remove seeds if necessary.
- Blend cucumber and 1 cup water in a blender until smooth. Strain through a mesh sieve and add the cucumber water to the lemon juice.
- Start by adding a 1/2 cup of simple syrup to the lemonade. Taste and add more syrup as desired. Keep in mind when serve over ice the intensity of the lemon will be reduced.
- Add cucumber slices to a pitcher with the lemonade. When ready to serve, add desired amount of ice to pitcher and serve garnished with mint.
