It must be January because we are making juice! But I really love a good green juice any time of year. This Cucumber Celery Juice is a perfect way to hydrate after a workout, or to start your day off right. The Celery juice craze is a lasting one in my book. It’s not only refreshing, it really helps my sensitive digestive system be a little more resilient. Let’s make it!

Ingredients
Cucumber Celery Juice
You can make this green juice with just celery, cucumber and water if you want. I add a little squeeze of lemon sometimes for extra flavor. And there are other flavor enhancers you can add like ginger or apple.
How to make cucumber celery juice
I make my fresh juices in my blendtec. It’s much simpler to me than messing around with a juicer. Plus, I really hate appliances and kitchen tools that only serve one purpose. Since the blendtec is so powerful, you can essentially use it as a food processor, juicer and of course a blender!
All you need to do to make this is add the celery, cucumber, water and squeeze of lemon (if you want) to the blender. Blend until smooth, then strain out the pulp through a mesh strainer.
And there you have it! Beautiful, healthy, tasty Celery Cucumber Juice!
Make it apple cucumber celery juice
If you are new to green juice, or you just need a touch more sweetness, you might want to add some apple to this! All you need to do is throw in some chopped apple.
I like to use a sweet/tart variety like honeycrisp. These are usually quite large so I just use one half of an apple. If you are using a smaller variety like gala, you can use one whole apple.

Ingredients
- 3 stalks celery, about 1 cup chopped
- about 1/2 and english cucumber, about 1 cup chopped
- 1 1/2 cups water
- 1 tbsp lemon juice
Instructions
- Place all ingredients in a high-powered blender and blend until smooth.
- Strain the mixture through a mesh strainer.
- Enjoy with ice if desired.
Notes
Additions: for a little sweetness, add 1/2 a large apple (like honeycrisp), chopped. For spice add 1/2 tsp grated ginger.
