Cream Cheese and Chive Mashed Potatoes

Cream Cheese and Chive Mashed Potatoes are easy and so delicious! These are extra creamy with a little tang from the cream cheese that just makes them irresistible.

Growing up my parents made cream cheese mashed potatoes all the time! It’s really the only way we ever ate them and I am so grateful for that. I added the chives for a little extra flavor but you can certainly omit them if you’re a mashed potato purist. These are so creamy with such great flavor thanks to a little tang from the cream cheese. And like all mashed potatoes, these are very easy to make, requiring very little kitchen skill. Let’s make them!

Ingredients

Cream Cheese and Chive Mashed Potatoes

  • Russet potatoes
  • Cream Cheese
  • Butter
  • Chicken stock, vegetable stock or milk (I like using stock)
  • Salt
  • Pepper
  • Fresh garlic
  • Chives

How to make Cream Cheese and Chive Mashed Potatoes

Step 1

Wash, peel and chop the potatoes in small pieces. This recipe calls for 5 large russet potatoes which will yield about 10 cups of diced potatoes.

Place the potatoes in a large pot and cover with water. You will want about 1 inch of water over the potatoes. Then place on the stove over high heat until the water is boiling. Reduce heat slightly then boil until potatoes are tender.

Step 2

After you’ve drained the potatoes, add the cream cheese, butter, garlic, salt, pepper and stock to the pot and use a potato masher to mash.

Step 3

You’re ready to serve! You can mix in chives or just add them to the top depending on your preference. Or you can leave them out altogether.

I might be biased but I think these cream cheese and chive mashed potatoes are perfect. Creamy and everything mashed potatoes should be. So good they don’t need gravy.

Ingredients

  • 5 large russet potatoes, peeled and cut into small pieces. (about 10 cups diced)
  • 1/4 cup unsalted butter
  • 1 8oz block cream cheese
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chicken stock
  • 1/2 clove garlic (grated)

Instructions

  1. Wash, peel and cut potatoes into small pieces. Place in a large pot and fill pot with water just to cover about and inch over the potatoes.

  2. Bring water to a boil, then reduce heat slightly and allow to boil until potatoes are tender, about 25 minutes.
  3. Drain water. Add cream cheese, butter, stock, grated garlic, salt and pepper. Use a potato masher to reach a creamy consistency. Top with chives.

Notes

Substitutions

Chicken stock: you can use vegetable stock or milk in place of chicken stock. If you use milk, you may need a touch more salt. Taste and adjust once you’ve mashed the potatoes.
