Cookies and Cream Pizookies

I remember pizookies being such a cool thing back in the day. And while I don’t dine at BJ’s as much anymore I’m still always down for a warm, freshly baked cookie topped with ice cream. There’s few things that are better in the food world. For this cookies and cream pizookie recipe, we make a simple cookie dough, load it up with oreos and extra chocolate chips, bake them in individual baking skillets and top with your favorite vanilla ice cream. As I mentioned above you can also use cookies and cream ice cream, or really any flavor you want! Let’s make them!

- Butter
- Granulated sugar
- Brown sugar
- Eggs
- Vanilla
- Flour
- Baking soda
- Salt
- Oreos
- Chocolate chips
- Ice cream
- Sea salt
How to make a cookies and cream pizookie
Start by making the cookie dough. This cookie recipe follows a basic drop cookie dough pattern or creaming butter + sugar, adding in eggs and vanilla. Then beating in the dry ingredients. And lastly folding in those tasty mix-ins. In this case, crushed Oreos and chocolate chips. You can also do a combo of regular chocolate and white chocolate chips if you want.
Press the cookie dough into your baking dishes and bake at 375F for about 9-11 minutes. You want the cookie to be gooey so definitely err on the side of taking them out sooner than later. Top cookies with sea salt and a scoop of vanilla ice cream and enjoy ASAP!

- Preheat oven to 375F.
- In a medium-sized mixing bowl, use an electric mixer (on high) to beat butter and sugar until creamy.
- Add the egg and vanilla and beat again until combined.
- Add the flour, cocoa powder, baking soda and salt and beat, starting on low, until fully combined. Stir in Oreo and chocolate chunks.
- Grease mini skillets (4-5 inch) with butter and add about 3/4 cup of cookie dough to each pan. Press it down to flatten it a little and bake for 9-11 minutes.
- Top with sea salt and vanilla ice cream and serve immediately.
