Coconut Cardamom Granola
This warm + toasty cardamom granola is crispy, lightly sweet and perfect for topping yogurt, smoothie bowls or just enjoying with milk.

I love granola! It’s so easy to make and just happens to be my favorite way to enjoy oats. This cardamom granola is complimented by toasted coconut flavor throughout. It’s got warm and comforting vibes, just the thing we need in the morning. Let’s make it!
Ingredient notes
Cardamom granola
- quick-cooking oats – you can use rolled oats too, but I find I get a more light and crisp granola when I use quick-cooking
- shredded unsweetened coconut
- ground flax seed
- ground cardamom
- salt
- brown sugar
- maple syrup
- coconut oil – you can also use olive oil or avocado oil but coconut oil helps boost the coconut flavor!
- vanilla extract
How to make cardamom granola
I think making your own is almost as easy as buying store-bought granola! If you keep a well-stocked pantry, you probably already have everything you need. Everything gets mixed up in one bowl and when you line your baking sheets with parchment paper, clean-up is a breeze.
Start by combining all of the dry ingredients in a large bowl. Then add the wet ingredients and mix until all of the dry ingredients are moistened.
Divide the oat mixture between two baking sheets lined with parchment paper. You want the granola in a thin, even layer.
Bake in a 325F oven for 35-45 minutes, once it turns golden brown and is really starting to smell amazing.
Allow granola to cool fully on the baking sheets, before crumbling and transferring to an airtight container or jar.
Just look at all those crunchy clusters! Once you see how easy it is to make your own granola, you’ll never want to buy store-bought again!
Variations and substitutions
Nuts
I didn’t add any nuts or seeds in this recipe because I wanted to keep it super simple, plus I already have a delicious granola recipe featuring lots more add-ins! But if you are wanting to add a little nutty crunch, you totally can. You can add up to 1 cup of nuts, just reduce the oats and the coconut flakes by half a cup. Just make sure nuts are raw. Some delicious nuts and seeds to add:
- pumpkin seeds
- sesame seeds
- pecans
- sunflower seeds
- chia seeds
- walnuts
- almonds
Dried fruit
If you like dried fruits in your granola, add in any type of dried fruit you want. Just mix them in once the granola is finished baking. You can mix it in right away when the granola is still warm.
Oil
If you don’t have coconut oil, you can sub avocado or olive oil. This will slightly reduce the coconut flavor impact, but your granola will still be delicious and crispy!
What to serve with granola
- This homemade granola is perfect with fresh fruit and yogurt
- Enjoying as cereal with milk
- Topping ice cream
- Topping for smoothie bowls or acai bowls
Storage instructions and shelf life
Once granola is fully cooled, transfer to an airtight container or jar. Store at room temperature for up to two weeks.
It will likely be safe to eat for longer but I think two weeks is max for the best flavor and texture.

- 3 1/2 cup quick-cooking oats
- 1 1/2 cups shredded unsweetened coconut
- 1/2 cup ground flaxseed
- 1/3 cup brown sugar
- 1 tbsp ground cardamom
- 1 tsp salt
- 1/2 cup melted coconut oil
- 3/4 cup maple syrup
Instructions
- Preheat oven to 325F.
- In a large mixing bowl, combine oats, coconut, flaxseed, cardamom, salt and brown sugar. Stir until combined.
- Add the melted coconut oil and syrup and stir until all of the dry ingredients are fully moistened.
- Divide the mixture between two baking sheets lined with parchment. Spread in an even layer.
- Bake for 35-45 minutes, until granola is turning golden brown. If you have the baking sheets on two different shelves of the oven, rotate them about half-way through for more even baking.
Notes
Oil – you can use avocado or olive oil in place of the coconut oil, it will lessen the coconut flavor of the granola but will still turn out great!
Nuts or other add-ins – if you want to add nuts or dried fruit, you can! Use raw nuts and add up to 1 cup, and reduce the oats and coconut by 1/2 cup. So you would use 3 cups oats, 1 cup coconut and 1 cup of nuts. Add dried fruit in after the granola is baked.
