Chocolate Dipped Rice Krispie Treats
These Chocolate Dipped Rice Krispie Treats are made with rich dark chocolate and classic gooey rice krispie treats! This is a great recipe for entertaining or just munching on with your afternoon coffee.
The classic rice krispie treats are one of my favorite no-bake desserts to make (and eat!). I love the crispy cereal, chewy marshmallows, and buttery-ness, and when I top that with my favorite dark chocolate and sea salt? So GOOD. While my Strawberry Rice Krispie Treats are also amazing and I love them, they feel more like a spring/summer dessert, or Valentine’s Day treat. Fall treats need a little more depth and richness! So let’s make these gooey chocolate covered Rice Krispie Treats!

Just a few simple ingredients are needed to make these krispie (krispy) treats:
- Rice Krispie Cereal – You can also use any off-brand crispy rice cereal you can find. No one will be able to tell the difference!
- Butter – I use salted because I mostly have that on hand and a touch of extra saltiness really makes for a tastier rice krispie treat, in my opinion!
- Marshmallows – It’s helpful to use mini marshmallows, but if all you have a regular size, use them! I’m dying to try these with fresh marshmallows, but for the moment, store-bought marshmallows are perfectly yummy.
- Vanilla extract – A little touch of vanilla extract is always good with chocolate!
- Dark chocolate – My favorite dark chocolate bars are the Dark Chocolate Lover’s Bars (affiliate link) from Trader Joe’s. They are so smooth and not too sweet. If you can’t find those, you can use dark chocolate chips or another dark chocolate bar that you like.
- Corn syrup – This will get mixed in with the dark chocolate for some extra shine and smoothness so it’s easier to dip the krispie treats.
- Sea salt (affiliate link) – I loveeee sprinkling a little sea salt on chocolatey baked goods. It really brings out the flavor of the chocolate and balances the sweetness from the marshmallows, making these feel pretty darn classy for rice krispie treats.
HOW TO MAKE CHOCOLATE DIPPED RICE KRISPIE TREATS
The base is made just like regular rice krispie treats!
STEP 1: Prepare the Pan
First, either grease a 9″ x 13″ baking dish (baking pan) with butter or line it with parchment paper or wax paper.
STEP 2: Melt Butter
Then start by melting butter, then adding marshmallows. Stir constantly until melted.
STEP 3: Combine
Once melted, turn off the heat and add the vanilla extract and a pinch of salt.
Remove the pan from the heat and stir in the rice krispie cereal with a rubber spatula until the cereal is evenly coated with the marshmallow mixture.
STEP 4: Shape Krispie Treats
Scrape the rice krispie mixture into the prepared baking dish, then press into an even layer. You’ll want to grease your hands with a little butter so the mixture doesn’t stick to your hands.
Allow this to cool/set in the fridge for about 30 minutes. Then we’ll dip!
HOW TO COAT RICE KRISPIE TREATS WITH CHOCOLATE
STEP 5: Melt Chocolate
Put the chocolate in a microwave-safe bowl and place in the microwave on high in 30 second increments until melted, stirring in between each interval. Then add the corn syrup.
STEP 6: Cut Into Squares
Cut the rice krispie treats into squares and have a wire cooling rack handy to place the treats onto as you dip.
STEP 7: Dip Krispie Treats
Drop a rice krispie treat face-down into the melted chocolate, lift and allow any excess chocolate to drip, then flip and place on the cooling rack. You can use the back of a spoon or a spatula to smooth out the chocolate if necessary.
STEP 8: Chill
Once all are coated, place the treats back in the fridge to set the chocolate. About 5-10 minutes in, when the chocolate has partially set, sprinkle with the sea salt.

Ingredients
Rice Krispie Treats
- 7 cups rice krispie cereal
- 5 1/2 cups mini marshmallows
- 6 tbsp salted butter
- 1 tsp vanilla extract
- pinch of salt
- sea salt for topping (optional)
Dipping Chocolate
- 8 oz chopped dark chocolate
- 1 tbsp corn syrup
Instructions
Rice Krispie Treats
- Grease a 9 x 13 inch baking dish with butter.
- Melt butter in a large stock pot over medium-low heat. Add the marshmallows and stir constantly until fully melted. Remove from heat and add vanilla and a pinch of salt. Then add the cereal and stir gently with a rubber spatula until cereal is coated with marshmallow mixture.
- Scrape the mixture into prepared baking dish and press down in an even layer using your hands. Grease your hands with a little butter to keep the mixture from sticking to your hands.
- Place dish in the refrigerator to cool for about 30 minutes.
- Melt the chocolate: place chopped chocolate in a microwave-safe bowl and microwave on high in 30-second intervals until melted. Then stir in the corn syrup.
- Remove the krispie treats from the fridge and slice into squares. Have a wire cooling rack nearby to place dipped krispie treats onto.
- Place a krispie treat one-side down into the chocolate just to coat the top and down the sides slightly. Then place on cooling rack. Continue with the rest until all are dipped.
- Place the cooling rack in the refrigerator for about 20 minutes to set the chocolate. After its in the fridge for about 10 minutes, sprinkle with sea salt so the chocolate is more tacky and doesn’t melt the salt.
