Chocolate Date Bars

These Chocolate Date Bars are so yummy! They’re simple, (mostly) refined sugar free and require no baking! These are so delicious, you won’t believe they are such a wholesome treat.

Ingredients

  • 2 cups medjool dates, pitted
  • 1/3 cup natural peanut butter
  • 10 oz chopped dark chocolate
  • 1 cup chopped walnuts, toasted
  • sea salt for topping

Instructions

  1. Place dates in a small bowl and pour enough boiling water over the dates, enough to just cover. Let stand for 5 minutes. 
  2. Drain water from dates and empty dates onto a paper towel. 
  3. Put dates and peanut butter in a high powered blender or food processor and blend until smooth. Stir in the chopped walnuts. 
  4. Press the mixture into a parchment lined 8 x 8 inch pan in an even layer. Chill in the freezer for 1 hour. 
  5. Cut the date mixture into desired sized bars. I did 3 inch x 1 1/2 inches (approximately) for each bar.
  6. Melt chocolate in the microwave until smooth. It’s best to melt and stir in 30 second-1 minute intervals.
  7. Roll the bars in the melted chocolate using two forks and place bars on a parchment lined baking sheet to set. Once the bars are all dipped, place in the freezer to set for 15 minutes. Sprinkle with sea salt and enjoy!
  8. Store leftover bars in the fridge in an airtight container for up to two weeks.
