Ingredients for chocolate date bars
- Medjool dates
- Peanut butter
- Walnuts
- Dark chocolate
- Sea salt
How to make chocolate date bars
Pour hot water over the dates to soften them and make blending them 10x easier. It also helps you get a much smoother consistency.
Drain and add dates and peanut butter to a food processor or high-powered blender and blend until a smooth mixture forms. Add the chopped walnuts and stir.
Press the mixture into a baking pan to form an even layer. Make sure to line the pan with parchment for easy removal.
Now chill the date mixture in the freezer for 1 hour. Just before it’s time to remove from the freezer, melt the chocolate: place chocolate in a microwave safe bowl and heat until melted. Microwave in 30 second intervals, stirring at each interval.
Cut the bars into desired size and arrange on baking sheet, lined with parchment. Use a fork to lower each bar into the chocolate and flip to fully coat in chocolate.
Once all are covered in chocolate, place the baking tray in the fridge so chocolate can set. Chill for 15 minutes. Top with sea salt and enjoy.
Store extra bars in the fridge in an air-tight container and enjoy for up to 2 weeks.

Chocolate Date Bars
These Chocolate Date Bars are so yummy! They’re simple, (mostly) refined sugar free and require no baking! These are so delicious, you won’t believe they are such a wholesome treat.

- Yield: 12 bars 1x
Ingredients
- 2 cups medjool dates, pitted
- 1/3 cup natural peanut butter
- 10 oz chopped dark chocolate
- 1 cup chopped walnuts, toasted
- sea salt for topping
Instructions
- Place dates in a small bowl and pour enough boiling water over the dates, enough to just cover. Let stand for 5 minutes.
- Drain water from dates and empty dates onto a paper towel.
- Put dates and peanut butter in a high powered blender or food processor and blend until smooth. Stir in the chopped walnuts.
- Press the mixture into a parchment lined 8 x 8 inch pan in an even layer. Chill in the freezer for 1 hour.
- Cut the date mixture into desired sized bars. I did 3 inch x 1 1/2 inches (approximately) for each bar.
- Melt chocolate in the microwave until smooth. It’s best to melt and stir in 30 second-1 minute intervals.
- Roll the bars in the melted chocolate using two forks and place bars on a parchment lined baking sheet to set. Once the bars are all dipped, place in the freezer to set for 15 minutes. Sprinkle with sea salt and enjoy!
- Store leftover bars in the fridge in an airtight container for up to two weeks.
