Ingredients

Chocolate Covered Yogurt Bites

  • Fresh strawberries
  • Yogurt – you can use any type of yogurt here, dairy or non-dairy. Sweetened or un-sweetened. If you want a little more sweetness, I recommend going with a sweetened vanilla yogurt.
  • Dark chocolate – this is also flexible. Use chocolate chips or your favorite dark chocolate bar. As always, I used my favorite from Trader Joe’s, their Dark Chocolate Lovers Bar (affiliate link). If you use chocolate chips, you may also want to have some coconut oil handy to thin out the chocolate for dipping.

How to make these easy chocolate covered yogurt bites

Chop fresh strawberries

Cut the strawberries into small pieces. You will need one pint of berries to yield about 3 cups of chopped fruit.

Mix berries and yogurt and freezer in clusters

Add yogurt to the chopped berries and use a 1/4 cup measuring cup to scoop scant 1/4 cups of the mixture onto a baking sheet lined with wax paper.

I used my favorite non-dairy cashew yogurt from Forager to make these and it worked out great. So if you’re wondering if you can use non-dairy yogurt to make these, you definitely can!

Once you’ve scooped all the clusters you can onto your baking sheet, place them in the freezer for at least 1 hour before attempting to dip in the melted chocolate.

Melt the chocolate & dip the frozen yogurt clusters

Melt the chocolate in the microwave (in a microwave-safe bowl, of course) in 30 second intervals, stirring between each. It will take about two minutes to fully melt the chocolate.

Place the chocolate coated clusters on a clean piece of wax paper to freeze again. They will pretty much firm up as you go because the berries clusters are frozen, but you will want to place in the freezer just to fully set before placing them all in one bag to store.

So pop them back in the freezer for about 30 minutes and then enjoy! Store any remaining yogurt bites in a Ziploc bag or other freezer-safe container. You will want to let them thaw slightly before enjoying once they’ve been in the freezer a while.
