Ingredients

  • 2 15 oz cans chickpeas (rinsed and drained)
  • 1 15 oz can black beans (rinsed and drained)
  • 1 cup diced tomatoes
  • 1/2 large yellow onion, diced (about 1 cup)
  • 1 cup fresh parsley (chopped)
  • 1/2 cup fresh cilantro (chopped )
  • 1 tbsp fresh mint (chopped )
  • 1/3 cup lemon juice
  • 1/3 cup avocado or canola oil
  • 1 tbsp red wine vinegar
  • 2 tsp garlic powder
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/8 tsp cayenne powder
  • 1 tsp cumin

Instructions

  1. Combine all ingredients in a large mixing bowl. Stir well and allow to marinate in the fridge for 30 minutes before serving.
  2. Serve as a side, on top of rice, greens, or in wraps. Delicious additions include feta and avocado.
