Brie Grilled Cheese

There's a lot of brie grilled cheeses out there but I think this one is the best. I love the sweet/savory/salty combo with the woodsy pop of thyme. Plus its just so easy to throw together but feel like you're eating something special.

Ingredients

  • 2 slices sourdough bread
  • 2 tsp salted butter
  • 1 oz brie cheese
  • 12 tbsp apricot jam
  • 2 sprigs fresh thyme

Instructions

  1. Heat a skillet over medium-high heat. Spread each slice of bread with butter on one side only.

  2. Flip the breads (butterless sides up), spread apricot jam on one slice and brie on the other. Cut off the rind of the brie if you wish. Remove the thyme leaves from the twig by gently pulling downward from the top of the sprig and sprinkle over the cheese.

  3. Put the slices together and place the sandwich in the pan. Cook for about 3 minutes per side, taking care not to burn the bread.

  4. Once the bread is toasted + golden and the cheese is melted, remove from the pan and serve immediately.

Notes

Measurements: please view measurements as a guide, this is grilled cheese after all. If you have bigger bread, you might want a little more cheese and jam. Less if it’s smaller, etc.
