Brie Grilled Cheese with Fresh Thyme & Apricot Jam

This Brie Grilled Cheese is such a good quick lunch. It’s so easy with minimal ingredients but feels fancy. Pair it with some lightly-dressed mixed greens to round out the meal and you’ll feel like you’re in a classy French sidewalk cafe.

If I’m being honest I kind of forgot about Brie for a while and I didn’t realize how much I missed it until I ate this grilled cheese. I used to eat it more often (this style of grilled cheese included), but sometimes I just get sidetracked by other cheeses. Hi feta! But omg the buttery/rich taste of Brie, sweet apricot jam and pop of fresh thyme is just unbelievably good. All on tangy sourdough! Let’s make it!

  • Brie cheese
  • Apricot jam
  • Butter
  • Fresh thyme

How to make brie grilled cheese

Like any grilled cheese sandwich, brie grilled cheese is the same level of difficulty, which is not very high. All you do is butter bread, each slice on one side. Then spread brie on one piece of bread, apricot jam on the other.

Sprinkle with fresh thyme. You could leave the thyme out and still have a delicious, indulgent sandwich, but trust me, thyme is perfect with this.

How do you cut brie for grilled cheese?

So brie cheese is not that easy to cut. You can freeze it to firm it up and make it easier to slice. But for this sandwich, its all going to get melted anyways so I just remove the rind, then spread the cheese on as best as I can. It’s more like placing chunks on the bread than spreading but you know what I mean, right?

Side note: if you’re wondering if the rind of brie is edible, it is! But I don’t care for it so I remove it.

What else can you pair with brie?

Other fruits go nicely with brie, particulary figs, cranberry (as in cranberry sauce) and apples. Honey also goes nicely!

Brie is super creamy, rich and buttery, but it does have a distinct flavor. It’s mild but there is a slight pungency, some people say earthy, but the point is it’s not as milk as mozzarella but no where near pungent like feta.

Brie also pairs well with salty things, hence, sourdough bread going perfectly with this. But it’s great with bacon, prosciutto or even chicken on a sandwich.

What to serve with this sandwich

I love to eat this with lightly-dressed mixed greens. It helps balance out the rich sandwich and I love dipping my sandwich in the extra dressing.

A note on measurements

I also want to point out that while I give measurements for this sandwich, its more of a guide. I don’t know exactly how big the bread is you will use or just your preferences! It’s sort of like pizza or salad where you can put a little more of what you love and a little less if you’re more indifferent. Follow your heart and you won’t go wrong 🙂

There's a lot of brie grilled cheeses out there but I think this one is the best. I love the sweet/savory/salty combo with the woodsy pop of thyme. Plus its just so easy to throw together but feel like you're eating something special.

Ingredients

  • 2 slices sourdough bread
  • 2 tsp salted butter
  • 1 oz brie cheese
  • 12 tbsp apricot jam
  • 2 sprigs fresh thyme

Instructions

  1. Heat a skillet over medium-high heat. Spread each slice of bread with butter on one side only.

  2. Flip the breads (butterless sides up), spread apricot jam on one slice and brie on the other. Cut off the rind of the brie if you wish. Remove the thyme leaves from the twig by gently pulling downward from the top of the sprig and sprinkle over the cheese.

  3. Put the slices together and place the sandwich in the pan. Cook for about 3 minutes per side, taking care not to burn the bread.

  4. Once the bread is toasted + golden and the cheese is melted, remove from the pan and serve immediately.

Notes

Measurements: please view measurements as a guide, this is grilled cheese after all. If you have bigger bread, you might want a little more cheese and jam. Less if it’s smaller, etc.
