Breakfast Sweet Potato Hash

This Breakfast Sweet Potato Hash is a delicious and simple way to enjoy a healthy breakfast!

While I love all foods, breakfast food has a special place in my heart. I just adore all the savory options at breakfast time. This breakfast hash includes one of not only my favorite breakfast foods but favorite all around foods: potatoes. This hash is made with sweet potatoes, peppers, onions and sausage. It’s super simple but so good! Let’s make it!

Ingredients for Breakfast Sweet Potato Hash

  • Sweet potatoes
  • Bell Pepper
  • Onion
  • Favorite breakfast sausage links
  • Eggs
  • Oil
  • Everyday seasoning (you can also buy an everyday seasoning blend from Trader Joe’s or just season with salt, pepper and garlic powder to taste)
  • Suggested toppings: ketchup, hot sauce, parsley or green onions

Super simple, see? Just 7 ingredients not including toppings. Even though I definitely recommend toppings! They make this feel like you’re enjoying breakfast at a cozy cafe 🙂

How to make

Peel and dice the sweet potatoes small. Dice onion and bell pepper.

Heat oil in a non-stick skillet over medium heat. Add the potatoes, onion and bell pepper and cook until potatoes and other veggies are soft. Sprinkle with everyday seasoning.

Thaw the sausage in the microwave, chop then add to the pan.

Crack desired amount of eggs directly over the hash and cover and cook until the whites are set. You can also cook the eggs separately in another pan if you wish.

Top with ketchup, hot sauce and some greenery (I like parsley and/or green onions).

Simple breakfast hash featuring sweet potatoes, peppers, onions, sausage and of course we need to top it off with a runny-yolked egg!

Ingredients

Units Scale
  • 3 cups diced sweet potatoes (peeled)
  • 1 green bell pepper (diced)
  • 1/2 red onion (diced)
  • 1 tbsp olive oil
  • 1 tbsp water
  • 1 tsp everyday seasoning
  • 6 links breakfast sausage (chopped or sliced)
  • salt and pepper

Instructions

  1. Heat oil in a large non-stick or cast iron skillet.
  2. Add peppers and onion, sprinkle lightly with salt and pepper. Cook 2-3 minutes, then add sweet potato and sprinkle lightly with salt and pepper again. Add everyday seasoning and 1 tbsp water. Cover and cook for 7-10 minutes.
  3. Remove cover and test sweet potatoes for doneness. Then add chopped sausage, stir and cook uncovered, stirring frequently until sweet potatoes are fork-tender. *If the sweet potatoes are still very firm after checking for doneness the first time, cover and cook until they are tender. You can add water by the 1 tbsp at a time if the mixture starts to stick.
  4. At this point you can decide to cook the eggs separately or crack them directly into the hash.
  5. To crack directly into the hash, make four wells in the hash and crack an egg into each. Cover and cook until whites are set, 5-10 minutes.
