BBQ Chicken Quesadillas
These BBQ Chicken Quesadillas are perfect for a quick weeknight meal. We’re gonna make it easy and use rotisserie chicken and your favorite BBQ sauce, but also going to sneak in some veggies to make them more wholesome!
It doesn’t take much to make a simple thing like quesadillas turn into a respectable meal. These BBQ Chicken Quesadillas prove that. I just use rotisserie chicken in these and my favorite bbq sauce from Trader Joe’s, plus some shredded zucchini + corn and you’ve got all your food groups in one little cheesy tortilla. These are so good. Let’s make them!

Ingredients
BBQ Chicken Quesadillas
- Flour tortillas
- Rotisserie chicken
- Barbeque sauce
- Cheddar cheese
- Zucchini
- Frozen corn
- Cilantro
- Butter or oil
How to make them
If you haven’t already picked the chicken– and by that I mean removed the meat from the bones– you’ll want to do that first. I do this right away when I bring one home from the store and store the shredded meat in a food storage container so it’s ready whenever I need it.
Combine chicken and BBQ sauce in a small bowl and shred the zucchini. If you’re grating your own cheese, do that now too!
Heat a griddle or large skillet. I heat my griddle to 350. If cooking on the stove in a skillet, heat over medium heat.
Assemble quesadillas. It is helpful to leave a little bit around the edge of the tortilla with no filling. This allows room for the cheese to melt without spilling out the sides too much. It also give you the ability to flatten the quesadilla down to meld everything together without making a mess!
Cook quesadillas on each side for about 3-4 minutes, until cheese is melted and tortillas begin to turn slightly golden brown. Press down on the tortillas when cooking to spread the filling to the edges.
Remove from the griddle and serve immediately.
I like them topped with extra cilantro and my favorite hot sauce.
These are also delicious with sour cream and/or avocado!
How to freeze quesadillas
If you plan to freeze all or some of your quesadillas for later, allow them to cool for 30 minutes once removed from the griddle. Then slice into desired fractions.
Place the pieces on a parchment-lined baking sheet and freeze for 1 hour.
Then transfer the slices to a large ziploc bag or other freezer-safe storage container.

- 4 6-7 inch flour tortillas
- 1 cup shredded rotisserie chicken
- 1/3 cup bbq sauce
- 2 tbsp chopped cilantro
- 1/2 shredded zucchini
- 2 cups shredded cheddar cheese
- 2 tbsp frozen corn
Instructions
- Heat griddle to 350F.
- In a small bowl, combine bbq sauce and chicken. Stir until chicken is fully coated with sauce.
- Assemble the quesadillas. Spread about 1/2 cup cheese on one tortilla, leaving about 1 inch of space around the edge.
- Top with bbq chicken, shredded zucchini, cilantro and corn. Top with another 1/2 cup cheese and another tortilla. Repeat with remaining ingredients.
- Place quesadillas on hot griddle and cook 3-4 minutes on each side, until golden. Before flipping, press down on quesadillas to flatten with the back of a spatula.
- Enjoy with hot sauce, sour cream, guacamole or all of the above!
