Banana Cupcakes with Peanut Butter Cinnamon Frosting
These cupcakes. Oh my goodness. Just the right amount of sweetness and really just the perfect balance of all the star flavors (banana, cinnamon and peanut butter) make for one delicious cupcake you won’t easily forget.
I love peanut butter and banana! I hardly eat straight up bananas anymore because I feel like they give me headaches but I used to love having a banana with some peanut butter as a snack. Having bananas baked into things doesn’t seem to bother me so these cupcakes are the perfect solution for me to get that PB + banana fix!
Here’s what you will need to make these banana cupcakes!
- Bananas of course!
- Flour, baking powder, baking soda and salt
- Coconut sugar
- Eggs
- Buttermilk

- Peanut butter and cinnamon obviously
- Butter
- Powdered sugar
- Milk – any type is fine!
How to get perfectly even cupcakes!
Have you ever made cupcakes or muffins and ended up with a bunch of different heights and felt kinda annoyed about it? I have! The easiest way to get perfectly even cupcakes is to use a cookie scoop or an ice cream scoop. For these I used my trusty OXO cookie scoop that I use allll the time. I just did two scoops of batter since my scoop is 1 1/2 tablespoons. So about 3 tablespoons of batter per cupcake should be the right amount and will yield 16 cupcakes.
Equipment you will need to make great cupcakes
- Electric mixer – another kitchen tool I use ALL the time! It’s compact, light and easy to grab out of my cupboard when I need it. You will use a mixer to combine the cupcake batter
- Cookie scoop – if you want perfectly even, uniform cupcake sizes
- Cupcake baking tin – pretty obvious, but I’ve link the one I have incase you are in need of a new one!
- Rubber spatula – to get every last drop of batter out of that bowl!
- Cupcake liners – or you can use non stick spray and go with out the liners. I’ve done this before and it works out fine.
- Off-set spatula – these are so great for precision application of this dreamy peanut butter frosting. I have a bunch of different sizes but I always go back to this one.

Ingredients
- 1/2 cup unsalted butter (softened )
- 1 cup coconut sugar
- 1 tsp vanilla
- 2 eggs
- 3/4 cup ripe, mashed banana (about 2 bananas)
- 1 cup buttermilk
- 2 cups all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
Frosting
- 3/4 cup unsalted butter (softened )
- 3/4 cup creamy peanut butter
- 2 cup powdered sugar
- 1 tsp cinnamon
- pinch of salt
- 1 1/2 tsp milk
Topping
- banana chips (optional )
Instructions
- Preheat oven to 350.
- Use electric mixer to combine 1/2 cup softened butter with coconut sugar until creamy. Add vanilla and eggs and beat until combined. Add the banana and mis again until combined.
- Combine the dry ingredients: flour, salt, baking powder, baking soda in a bowl. Add the dry ingredients and buttermilk in thirds alternating between the dry ingredients and buttermilk while continuously mixing until fully combined.
- Line a cupcake it with cupcake liners. Fill each with approximately 3 tbsp of batter. I used my 1.5 tbsp cookie scoop and put two scoops per cupcake.
- Bake for 18-23 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool fully before frosting.
Making the frosting
- Combine peanut butter and butter in a mixing bowl and use an electric mixer on medium speed to beat until smooth. Add powdered sugar and continue to beat on medium for about one minute. Add cinnamon, milk and pinch of salt and continue beating until smooth.
- Frost each cupcake with a generous amount of frosting using an off-set spatula for precision.
