Bacon Wrapped Pineapple Bites
Hello bacon wrapped pineapple bites ? Bite-sized pieces of fresh marinated pineapple wrapped in a bacon blanket! Just a few simple ingredients and you’re on your way to this savory and sweet crowd-pleasing appetizer.
I’ve had this little gem of a recipe basically unknowingly for almost four years now. You know the old bridal shower gift of favorite recipes from all the guests compiled in a book or cute little recipe box? That’s where this was. These pineapple wrapped bacon bites are so simple and full of flavor. And they just happen to be another gem from Grandma Judy, who is my very talented grandma-in-law that also gave me the rhubarb roly poly recipe (my absolute favorite non-chocolate dessert).
The nice thing about this appetizer is it is super easy to make ahead! You can assemble these the night before and refrigerate right on the baking sheet. Just pop them straight in the oven when you are ready.
Ingredients for bacon wrapped pineapple bites
- Pineapple: you can cut up a whole pineapple yourself or just buy the precut kind. You will just need about two cups of 1-inch chunks
- Bacon: the second most obvious ingredient. I recommend using a thicker cut bacon if possible. The thinner kind rips more easily but its not the end of the world if thin-cut is all you have.
- MARINADE INGREDIENTS (yes, we are going to marinate pineapple!):
- Orange juice
- Pineapple juice
- Brown sugar
- Soy sauce
That’s it guys!
How to make these bacon-wrapped beauties
First, you need to marinate the pineapple. Don’t skip this step! Plan ahead a little and let it marinate for an hour so the pineapple can soak up all that good flavor from the marinade. Just mix the soy sauce, juices and brown sugar, add the pineapple, cover and refrigerate for one hour. This is also a good time to soak your toothpicks so they don’t burn in the oven.
The marinade is what separates this from other pineapple bacon bite recipes—it will give you maximum flavor!
Next, cut the bacon strips in half. Discard the pineapple marinade and begin wrapping each chunk with a half-strip of bacon, securing with a toothpick.
Place on a foil or parchment-lined baking sheet and bake for about 40 minutes or until the bacon begins to crisp.
You’re ready to party!
Tips for recipe success
- Make sure to marinate the pineapple so it can soak up the flavors from the soy sauce, brown sugar and orange juice
- Soak your toothpicks in water while the pineapple marinates, this keeps them from burning in the oven.

Ingredients
- 1 cup pineapple juice
- 1 cup orange juice
- 1/4 cup soy sauce
- 3 cups pineapple (cut into 1 inch chunks)
- 1 lb bacon, stips cut in half
- 3 tbsp brown sugar (firmly packed)
Instructions
- Soak 20 toothpicks in water.
- In a large bowl, combine pineapple juice, orange juice, soy sauce and brown sugar. Add pineapple, cover and allow to marinate and chill for 1 hour.
- Drain pineapple and discard marinade.
- Preheat oven to 400F.
- Line a rimmed baking sheet with foil or parchment. Wrap each pineapple chunk with 1/2 slice of bacon and secure with a toothpick.
- Place on baking sheet and bake for 40-45 minutes or until bacon is crisp.
- Enjoy warm.

How long can I marinate the bacon and pineapple?
Hi Carol, the recipe calls for 1 hour of marinating the pineapple. You don’t marinate the bacon though. After the pineapple marinates, wrap each pineapple chunk in 1/2 a slice of bacon. Enjoy!
