Avocado BLT with Sriracha Mayo

Wondering how to upgrade your BLT with just one little ingredient? Try making an avocado BLT! It’s a huge flavor boost and adds another plant-based ingredient to make a more indulgent sandwich feel a little more wholesome. Recipe includes quantities for one sandwich.

Ingredients

  • 4 strips of bacon
  • 1 tbsp mayo
  • 1/2 tsp sriracha
  • 2 slices sourdough bread
  • 1/2 medium avocado
  • 23 slices of tomato
  • 1 leaf ice berg lettuce, cut into 4ths
  • freshly cracked black pepper, optional

Instructions

  1. Preheat oven to 425F. 
  2. Arrange bacon slices in an even layer on a baking sheet lined with parchment. Bake until bacon is browned and crisp, about 15-20 minutes.
  3. Transfer the bacon to a paper towel lined plate to remove excess grease. 
  4. Combine mayo and sriracha in a small bowl and mix until combined.
  5. Toast the bread to desired doneness and spread mayo on both slices.
  6. Scoop out the avocado and smash onto one slice of bread with a fork.
  7. Add tomato (sprinkled with freshly cracked black pepper, if using, then add bacon. Break bacon strips in half and arrange 3-4 strips vertically, then the remaining horizontally. 
  8. Top with lettuce and remaining slice of bread.
