Avocado BLT Sandwich with Sriracha Mayo

Wondering how to upgrade your BLT with just one ingredient? Try making an avocado BLT! It’s a huge flavor boost and adds another plant-based ingredient to make a more indulgent sandwich feel a little more wholesome.

Sometimes an easy weeknight dinner means sandwiches and that’s okay. Especially when it’s an Avocado BLT! BLTs are an easy option for dinner and are always such a crowd-pleaser. I like to add sriracha mayo because it compliments the salty bacon and creamy avocado beautifully, but feel free to use regular mayo. Let’s make a BLT!

Ingredients

Avocado BLT Recipe

While a classic BLT sandwich includes just bacon, lettuce, tomato and some mayo, we are going for a next level BLT today! Adding not only avocado but a delicious homemade sriracha mayo. Here’s what you’ll need:

  • slices of bread – the type of bread is totally up to you. I used Trader Joe’s sourdough here, but I often will also use Ezekiel bread or something fun like ciabatta.
  • crispy bacon – I prefer thinner-cut bacon in all situations but go with thick-cut bacon if that’s what you like. I think a thin cut is better for sandwiches because it gets crispier and is easier to get a clean bite. If turkey bacon is your thing, that works, too! 
  • iceberg lettuce – you have options here too, I really like to use mixed greens and butter lettuce on a BLT, too, but crunchy lettuce such as romaine lettuce works great as well.
  • ripe avocados
  • tomato – the best kind of tomato to use on sandwiches are beefsteak, roma or heirloom tomatoes. They hold up well and are easy to make large enough slices for easy sandwich assembly and consumption.
  • mayo
  • sriracha
  • freshly cracked black pepper – this is totally optional but I love the extra flavor it adds!

And that’s all you’ll need to make one amazing BLT!

How to make the best avocado blt

If you haven’t started cooking your bacon in the oven, you need to start! No more greasy counters/stovetops—you will love it!

Preheat your oven to 425F and line a large baking sheet with parchment. Depending on how many sandwiches you will be making, you might need to use two baking sheets.

Arrange the bacon strips on parchment paper in an even layer. You don’t want the bacon to overlap.

Bake in the oven for 15-20 minutes, until browned. Transfer to a plate or cooling rack lined with paper towels to remove excess fat.

**Slice tomatoes and rinse lettuce while the bacon cooks.

Make sriracha mayo

This is so easy and it only requires two ingredients: sriracha and mayonnaise. Simply place these two ingredients into a small bowl and mix. My preferred ratio is two drops of sriracha per tablespoon of mayo. If you like things more spicy, add more sriracha!

Assemble the BLTs

Toast bread lightly, if desired. Slather on some sriracha mayo on one side of each slice of bread. Then add a layer of avocado to one of the slices. I prefer to scoop and smash the avocado onto the bread rather than add avocado slices. This prevents the slices from sliding out of the sandwich.

Top the avocado with tomato slices and add some freshly ground black pepper if you wish. Then add the bacon. Break the slices in half so they fit on the bread nicely, lining up the strips vertically, then the remaining slices horizontally. Top with lettuce leaves and the remaining slice of bread.

What goes well with BLT Sandwiches?

If you want to go more indulgent, BLTs are always nicely complimented by chipsfries and/or onion rings.

When you’re feeling more health-conscious, fresh veggies or fruit are also great.

You can also use extra mixed greens to make a simple salad with a vinaigrette.

A cup of soup is another classic side to serve with a BLT or any sandwich! My vegetable bean soup is my favorite soup to serve with a sandwich.

If you don’t want french fries but still want potatoes, potato salad is another great option. I have a tasty potato salad recipe without mayo if you want to keep your side light!

Storage Instructions

Storing leftovers for tomorrow’s lunch? Simply place fully assembled sandwiches into an airtight container and keep in the fridge for up to 2 days. To prevent a soggy sandwich, be sure to wrap it in a paper towel before sealing the lid.

  • 4 strips of bacon
  • 1 tbsp mayo
  • 1/2 tsp sriracha
  • 2 slices sourdough bread
  • 1/2 medium avocado
  • 23 slices of tomato
  • 1 leaf ice berg lettuce, cut into 4ths
  • freshly cracked black pepper, optional

Instructions

  1. Preheat oven to 425F. 
  2. Arrange bacon slices in an even layer on a baking sheet lined with parchment. Bake until bacon is browned and crisp, about 15-20 minutes.
  3. Transfer the bacon to a paper towel lined plate to remove excess grease. 
  4. Combine mayo and sriracha in a small bowl and mix until combined.
  5. Toast the bread to desired doneness and spread mayo on both slices.
  6. Scoop out the avocado and smash onto one slice of bread with a fork.
  7. Add tomato (sprinkled with freshly cracked black pepper, if using, then add bacon. Break bacon strips in half and arrange 3-4 strips vertically, then the remaining horizontally. 
  8. Top with lettuce and remaining slice of bread.
